Tomato Sandwich
Like our Tomato Pie, this is a treat to make when really good tomatoes are available. It’s astonishing how good only three ingredients – tomato, bread and mayonnaise – can be. (Of course, you can embellish the sandwich with avocado or a couple slices of bacon.) Use any bread, but one of the best choices is sturdy country white.

Ingredients
- 1 or 2 slices bread
- 1 large ripe tomato
- 1 tablespoon Blue Plate® Mayonnaise or Blue Plate® Light Mayonnaise per slice of bread
- Salt, to taste (optional)
- Coarsely ground black pepper, to taste (optional)
Directions
- Cut the tomato with a serrated knife into several thick slices. Layer the slices onto paper towels to drain the excess juices.
- Arrange the bread on a plate or cutting board. The bread can be toasted, if desired.
- Spread 1 tablespoon mayonnaise (or to taste) on each piece of bread. If you are using just 1 slice, slice it in half after spreading.
- Layer the tomatoes on one piece of bread and season with salt and pepper (optional).
- Top with the second piece of bread, press together, and cut in half.
- Serve immediately.
