Mini Po-Boy Party Platter

Switch out those same ol’ triangle sandwiches for a platter of mini po-boys! All you need is a loaf of New Orleans style French bread (a Leidenheimer’s po-boy loaf is 32 inches long) and your favorite deli meats, like Chisesi’s Pride® Ham, and thin-sliced cheeses. Dress it with Blue Plate Mayo, of course.

18-24 mini po-boy slices

Ingredients

  • 1 large New Orleans style po-boy bread loaf (such as a 32-in. loaf of Leidenheimer® French Bread)
  • 3/4 cup Blue Plate® Mayonnaise
  • 3/4 pound thin-sliced deli ham (we used Chisesi)
  • 3/4 pound thin-sliced deli roast turkey
  • 3/4 pound thin-sliced deli roast beef
  • 12 slices thin-sliced cheese
  • 2 1/2 cups shredded lettuce
  • Hot sauce, to taste (optional)

Directions

  1. Slice the rounded edges off each end of the loaf, if necessary.
  2. Horizontally slice into the loaf lengthwise, keeping the pieces connected on one edge, to create a top half and bottom half.
  3. Spread the mayonnaise to taste on the inside of the loaf, on both the top and bottom pieces.
  4. Layer the meats in 3 sections on the bottom half of the loaf. Layer the cheese on top of the meat, then top the cheeses with the shredded lettuce. Shake on a few dashes of hot sauce, if desired.
  5. Close the loaf tightly and wrap the loaf in kitchen parchment paper to hold it together. Using a sharp knife, slice the loaf into 1½ inch thick po-boy slices.
  6. Arrange the po-boy slices on a platter and serve.
