Smoked Chicken (or Turkey) Salad

Got a smoked rotisserie chicken, or some smoked turkey left over from a holiday feast? A few chops (or pulses in a food processor), some crisp chopped celery and a few dollops of mayo make a great chicken salad to serve in sandwiches or over a bed of greens. It’s Southern comfort food in every bite, made with Blue Plate Mayo – That’s the good stuff!

Directions

  1. Pulse the celery in the bowl of a food processor several times to finely chop. Empty into a large bowl. Working in batches, pulse chicken until finely chopped. Add to bowl with celery.
  2. Add the mayonnaise, salt and pepper. Stir until all ingredients are well blended. Taste and adjust seasoning if needed.
  3. Cover and refrigerate until serving.
