BLT Chipotle Chicken Wrap

A quick, flavorful idea for lunch that’s a twist on an American classic – the bacon, lettuce and tomato sandwich. You can substitute arugula for the romaine, or use any other lettuce you have on hand.

Ingredients

BLT Chicken Wrap

  • 1 large tortilla, warmed slightly
  • 2 tablespoons Chipotle Mayo, divided, recipe follows
  • 2 slices bacon, cooked
  • 2 slices tomato
  • 1/2 grilled chicken breast, sliced
  • 1/2 cup romaine lettuce, chopped

Chipotle Mayo Sauce

  • 1/2 cup Blue Plate® Mayonnaise
  • 1/2 cup sour cream (or Mexican crema)
  • 3 teaspoons lime juice
  • 2 to 3 teaspoons chipotles in adobo, finely chopped
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon fine sea salt

Directions

  1. Make the Chipotle Mayo Sauce: (Makes 1 cup. Reserve any extra sauce for another use.) Combine mayonnaise, sour cream, lime juice, chipotles, chili powder and sea salt in a mixing bowl and stir well. (Optional: Cover and let stand in the refrigerator for up to 30 minutes to allow the flavors to meld together.)
  2. Spread 1 tablespoon Chipotle Mayo Sauce on tortilla.
  3. Top with bacon, tomato, chicken and romaine lettuce.
  4. Drizzle with some of the remaining Chipotle Sauce as desired.
  5. Roll the tortilla tightly and serve.
